      Hi Em! So glad to hear that you love the recipe πŸ™‚ The icing is just leftover filing piped on top using a piping bag and star tip. Hope that helps!

    How long can these be stored for?

      Hi Kim! In an airtight container in the freezer they should last a few months. In the fridge, definitely not as long, but I would say that 5-7 days you’re still good. Freezer is your best bet though. Then just pop them in the fridge a few hours before you want to eat them πŸ™‚

    Do you think the filling could be blended well enough using a food processor? I only have a food processor, no blender (though eventually, hopefully, I’ll invest in one). Thanks!

      Hi Jan! I’ve never actually tried to make the filling with a food processor, so I’m not sure exactly how it would turn out. I don’t think it would be quite as smooth, but I do think it would work. I use my food processor to make hummus and that always turns out pretty smooth. Just be sure that you cashews are soaking in the fridge overnight. They’ll be softest at that point. Good luck! I’d love to hear how they turn out πŸ™‚
