Lentil Vegetable Soup

Serves: 6 Cooking Time: 30 minutes


  • 3 medium-sized carrots
  • 1 celery stick
  • 1/2 red onion
  • 1 can diced tomatoes
  • 1 cup red lentils (rinsed)
  • 5 cups vegetable broth
  • 1 cup chopped spinach
  • โ€” spices โ€”
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp coriander
  • 1 tsp ginger
  • 1/4 tsp cayenne (optional)



Peel and chop the carrots. Chop the celery. Dice the onion. Rinse the lentils.


In a large pot, with a few tablespoons of water, cook the carrots, celery, and onion for 5 minutes on medium.


Add the spices, tomatoes, lentils, and broth. Bring to a boil, then simmer reduce heat and simmer 20 minutes.


Add the spinach (frozen or fresh). Cook 5 minutes.


Serve hot!
