The days are getting short, the air is getting crisp. That can only mean one thing—pumpkin spice everything season is officially here! Waffles on the weekend are pretty much a staple over here—it’s like having dessert for breakfast (how can your day not be great if it starts off so sweet). Best part? You can drown these puppies in just about anything you’d like. We went with a classic: coconut whipped cream and maple syrup (the real deal, sorry Aunt Jemima).

No doubt you’ll see plenty of pumpkin spice in the next little while. Promise—these will not disappoint.

Pumpkin Spice Waffles

Serves: 3 Cooking Time: 45 minutes

Ingredients

  • — Wet Ingredients —
  • 1 cup pumpkin puree
  • 1 1/2 cups almond milk
  • 1/2 cup apple sauce
  • 1 tbsp coconut oil
  • 1 tbsp agave
  • 1 tsp apple cider vinegar
  • — Dry Ingredients —
  • 1 cup flour
  • 1 cup oats
  • 3 tsp baking powder
  • 2 tsp cinnamon
  • 2 tsp pumpkin spice
  • 1/4 tsp salt

Instructions

Mix the wet ingredients together in a blender.

Add the dry ingredients to the wet and blend until smooth.

Preheat your waffle iron and cook until the shell is golden brown and doesn't fall apart.

Top with maple syrup, powdered sugar, or coconut whipped cream!
